The slab is on the smoker (dome temp 170, belly temp 120 deg) so I don't know yet. This is my second attempt... first cooked way faster than I thought it would so it's internal temp was 180, tasted good, but was essentially ham.
This belly's skin had the nipples on it. It disturbed me much less than I would have thought. If nothing else I have learned I am certainly NOT a vegan in hiding.

I found your blogsite when I was Googling for a bacon cure recipe, and have read a bunch of your stuff. Very cool. We won a slab of uncured belly in an auction at Cochon 555, a traveling porkfest based out of Atlanta which involves 5 heritage breed pigs, usually Berkshires, 5 Chefs, and 5 Wineries. You should check it out. Loved, loved, the Caja China...

Amazing! It's my first time to see a doughnut with bacon toppings. I can't imagine the taste of having the bacon matched with the sweetness of maple frosting but would love to try one though. :)

Look forward to trying it. Widmer is pretty consistent in producing very drinkable everyday beers. I loved Crimson Wheat -- it pairs very nicely with cheese!

I gave up real beer (Guinness when I could afford it) after an attack of pancreatitis, at age 60, which will really get your attention.

I rate Kaliber and Claushaler different but equal. I rotate them for variety. I like them both.

Funny thing, I used to drink a lot of beer for a little guy. Now, just a couple of N/A are all I want and I go for days with none at all.

I am at the point where I can now go "out for a beer" with a crowd but few bars and restaurants have any N/A except the Amurikan swill like O'Fools. I tell them it's undrinkable and order a nice glass of water.

Now, have you tried Vosge's Beer Chocolate called Mo's Bar? (http://www.vosgeschocolate.com/product/bacon_exotic_candy_bar/exotic_candy_bars)
I'm so intrigued. A website called www.fredflare.com sells the bacon soap you bought (as well as bacon bandaids, bacon floss, bacon jellybeans, and best of all, a bacon wallet (http://www.fredflare.com/customer/product.php?productid=5045&cat=108). They sell Mo's bar but they're out of stock right now. I'll let y'all know when I try it. You should do the same!
