… Make cherry beer.

I bottled the cherry brew today. 10 lbs. of sour cherries have certainly left their mark on the (almost) finished product. The beer is pretty sour, but there is a strong cherry flavor there, too. It’s kind of kriek-like, but maybe just a little cleaner tasting, very crisp and refreshing. There’s some alcohol there, too, a bit more than the measurements would indicate. I would have guessed 5.5% or so, but it’s substantially less than that.
Some time in the bottle will probably mellow down the sourness some, but I think this will be a great one. I do think that next time I make this, I may do some portion of the 10 lbs. as Rainier or Bing to sweeten it up a touch. A little cinnamon might be nice, too. Color is maroon or mahogany.

Final Gravity: 1.014 @ 72 degrees F
ABV: 4.68%
Thom and I are bottling the “Mouthful of Metolius” tomorrow afternoon. I’m really curious what that one is going to taste like.
